These protein freezer waffles are so easy and delicious! This recipe is made with only six ingredients and is high in protein. Double or triple the batch and keep them in the freezer for upcoming weeks.
mini plastic cups for maple syrup and almond butter, optional
Ingredients
For the waffles
1packetBiPro Protein Powderapproximately 29g
¾cupold fashion oats
1cupcottage cheesethe higher fat content, the better (we used 4% fat)
3largeeggs
2teaspoonmaple syrupor sweetener of choice (adjust to liking)
1teaspoonpure vanilla extract
½teaspoon baking powder
For meal prepping
4cupsberries
4tablespoonmaple syrup
4tablespoonalmond butteror nut butter of choice
Instructions
Place all waffle ingredients in a food processor or blender and blend until smooth.
Preheat your waffle maker and coat with non-stick spray.
Pour about 3-4 tbsp* of batter into each waffle section in your waffle maker.
Cook according to waffle maker directions.
Repeat until all batter is cooked.
To meal prep
Evenly divide the waffles among four meal prep containers.
Add 1 cup berries and 1 tablespoon each maple syrup and almond butter to each container.
Cover and store until ready to eat.
When it is time to eat, you can enjoy these cold or heat them in the toaster oven, microwave or regular oven. Please note that reheating them in the microwave might leave them a bit soft.

*If you are using a mini waffle maker you will need to use less batter.
