3 small ripe bananas 2 tbsp. Coconut Oil 5 large eggs 2 tsp. maple extract ¼ tsp. liquid stevia 1 ¾ cup almond flour (not almond meal) 2 tsp. baking powder ½ tsp. Sea Salt ½ cup pecans chopped
Preheat oven to 350 degrees F
Line 10 muffin cups with paper liners
Add bananas and coconut oil to a bowl and microwave for 1 minute or until bananas are very soft. Mix well
Add in eggs, maple extract and stevia. Mix until fully combined
Stir in almond flour, baking powder, and sea salt
Mix until just combined (do not over mix)
Divide batter between 10 muffin cups
Sprinkle with pecans
Bake for about 35 minutes or until golden
*Pecans can be mixed directly into your batter or sprinkled on top
