Ingredients

  • 3 small ripe bananas
  • 2 tbsp. Coconut Oil
  • 5 large eggs
  • 2 tsp. maple extract
  • ¼ tsp. liquid stevia
  • 1 ¾ cup almond flour (not almond meal)
  • 2 tsp. baking powder
  • ½ tsp. Sea Salt
  • ½ cup pecans chopped

Instructions

  • Preheat oven to 350 degrees F
  • Line 10 muffin cups with paper liners
  • Add bananas and coconut oil to a bowl and microwave for 1 minute or until bananas are very soft. Mix well
  • Add in eggs, maple extract and stevia. Mix until fully combined
  • Stir in almond flour, baking powder, and sea salt
  • Mix until just combined (do not over mix)
  • Divide batter between 10 muffin cups
  • Sprinkle with pecans
  • Bake for about 35 minutes or until golden
