Healthy Oatmeal Muffins

Ingredients

  • 2.5 cup old fashioned oats
  • 2 cups almond milk
  • 2 scoops protein powder
  • 2 large eggs
  • 1 large banana
  • 1 tsp. ground cinnamon
  • 1 tbsp. Honey
  • 1.5 tbsp. Coconut Oil melted
  • pinch Salt

Extras

  • 1/4 cup blueberries
  • 1/8 tsp. allspice

Instructions

  • Preheat oven over 375 F.
  • Mix all dry ingredients in a large bowl. Mash banana in a small bowl and mix with all wet ingredients.
  • Pour wet mixture over dry mix, gently combine mixing.
  • Pour melted coconut oil into mixture and combine mixing.
  • Add fruit of your choice gently into the mixture.
  • Pour the mixture evenly into 14 muffin cups. Bake about 35 minutes.

Notes

**I like it with 1 tsp peanut butter and a fresh strawberry star on top. Plus drizzling a bit honey on baked muffins won’t kill anyone :)
