Salads 8 cups baby spinach 1 can chickpeas drained and rinsed 1 large Cucumber sliced 1 medium bell pepper thinly sliced 2 cups Cherry Tomatoes halved 1 medium red onion thinly sliced 1 cup black olives sliced 1 large Avocado Dressing ¼ cup olive oil 3 tbs balsamic vinegar 1 tbs lemon juice 1 teaspoon Honey or date syrup 1 teaspoon Dijon Mustard ½ teaspoon italian seasoning ¼ teaspoon Salt
Add all dressing ingredients to a jar, and shake to combine.
Layer veggies and chickpeas on beds of spinach.
Add avocado and dressing right before serving.
