Superfoods Almond Butter Bars

Ingredients

  • ½ cup Rice Krispies
  • ½ cup dried goji berries
  • ¼ cup mulberries
  • ¼ cup chia seeds
  • ½ cup shredded coconut
  • ¼ cup pumpkin seeds
  • ¼ cup almond butter
  • ¼ cup honey
  • 2 tablespoon coconut sugar
  • 2 teaspoon coconut oil if needed*

Instructions

  • Mix the almond butter, honey, and coconut sugar in a small mixing bowl.
  • Combine the dry ingredients in a large mixing bowl.
  • Add almond butter mixture to the dry ingredients and mix well.
  • Line a 5" x 9" bread pan with aluminum foil and fill it with the superfoods bar mixture, pressing it into place with your fingertips so that it's even.
  • Refrigerate for 2-3 hours, and then cut and serve.
