Ingredients

  • 2 cups oat flour
  • cup coconut sugar
  • 2 medium apples
  • 2 small bananas ripe
  • 6 ounces nonfat Greek yogurt
  • ¼ cup coconut oil
  • ¼ cup almond milk
  • 3 large eggs
  • 2 teaspoon cinnamon
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ cup walnuts

Instructions

  • Preheat oven to 350F and prepare a loaf pan with parchment paper and set aside.
  • Chop the apples into small pieces and place them into a food processor or blender along with the bananas, egg,s and yogurt. Blend until smooth, then transfer the mixture to a large bowl. Whisk in the almond milk and coconut oil.
  • Add in the oat flour, coconut sugar, cinnamon, baking soda, and powder. Stir until completely incorporated. Fold in the walnuts.
  • Pour batter into the prepared pan and bake for 55-60 minutes or until a toothpick stuck in the middle yields a few crumbs. Let cool before cutting into slices and serving.
