Preheat the oven to 350 F. Grease the inside of a 9”x5” baking pan and transfer the meatloaf to the pan.
Place the potatoes with the skin on in a boiling pot of water.
Boil the potatoes 35-40 minutes or until they are softened.
While the potatoes are cooking, prepare the meatloaf by whisking together the eggs with the red onion, grated apple, onion powder, paprika, salt, pepper and almond flour in a large mixing bowl.
Add the meat to the bowl and gently incorporate it with your hands.
Bake at 350 F 30 minutes then remove from the oven then add the BBQ sauce to the top.
Bake at 350 F another 10-15 minutes until the meatloaf has set.
Remove from the oven and let the meatloaf sit in the pan 10 minutes before removing and slicing.
While the meatloaf sets, remove the potatoes from the pot of water.
