  • 1 pound Chicken Breast pounded thin
  • 1/2 cup pizza sauce
  • 3 ounces shredded mozzarella
  • 2 ounces feta cheese
  • 1/2 small red onion thinly sliced
  • 1/4 cup sliced black olives
  • 1/2 cup peppers thinly sliced
  • 1/4 cup mushrooms thinly sliced
  • 1/4 cup Cherry Tomatoes cut
  • salt & pepper as desired
  • fresh basil if desired
  • 2 cups Broccoli steamed or roasted


  • Preheat oven to 375 degrees F
  • Place chicken on a baking sheet
  • Season with salt & pepper
  • Top with pizza sauce
  • Bake for 8-10 minutes
  • Remove from the oven and top chicken with mozzarella cheese and vegetables
  • Bake for an additional 6-10 minutes or until cheese is melted and vegetables are tender
  • Top with fresh basil, if desired
  • Serve with steam broccoli
