Ingredients

  • 1 cup rolled oats gluten free, if needed
  • 4 tsp Chia Seeds
  • 1/4 cup shredded unsweetened coconut
  • 1 cup frozen pineapple
  • 2 cups coconut milk full fat or unsweetened low calorie
  • 2 tsp lime juice
  • 1 scoop vanilla protein powder or collagen powder
  • 1 tbs dark maple syrup
  • granola optional

Instructions

  • Divide all ingredients between two mason jars and whisk with a fork to combine.
  • Refrigerate overnight. In the morning, stir and serve with your favorite granola.
  • Leftovers keep in the fridge for 5 days.
