Whole30 Zucchini & Sweet Potato Hashbrown Meal Prep
This Whole30 Zucchini & Sweet Potato Hashbrown meal prep is a delicious and healthy alternative to fried hashbrowns. Sweet potatoes and zucchini are swapped in for the traditional white potato adding a burst of flavor and nutrition. Crispy on the outside and soft on the inside. Gluten-free. Paleo.

Ingredients
Instructions
  1. Preheat oven to 425 degrees F
  2. Place shredded potato and zucchini in a towel ans ring out excess water
  3. Place back into a bowl and add in 1 egg, salt and pepper
  4. Mix well
  5. Evenly divide mixture into 6 hashbrowns
  6. Place on a baking sheet
  7. Flatten into desired size
  8. Bake for 15 minutes or until set
  9. Flip and bake for another 15 minutes
  10. While hashbrowns are baking, cook remaining 6 eggs as desired (we did hard boiled) and bacon
  11. When hashbrowns are down, turn the oven onto broil and crisp for 1-2 minutes, if desired
  12. Place hashbrowns, eggs, bacon, and sliced avocado unto containers
  13. Store for up to 4 days
