**Meatballs**

  • 1 pound ground turkey breast
  • garlic powder
  • onion powder
  • ginger

**Thai Almond Butter Sauce**

  • 3/4 cup coconut milk
  • 1/2 cup almond butter
  • 2 tbsp. red curry paste
  • 1 tbs coconut vinegar
  • 1 tbsp. coconut aminos
  • 1/8 tsp liquid stevia
  • squeeze fresh lime juice
  • Optional Sides: cauliflower rice, carrots, almonds, cilantro

20 Minute Paleo Thai Almond Butter Turkey Meatballs
Instructions
  1. Preheat oven to 425 degrees F
  2. Mix together all Thai Almond Butter sauce ingredients
  3. Place 1/4 cup sauce in the bottom of a cast iron skillet
  4. Mix together all ingredients for meatballs and roll into desired size meatballs (do not overmix or the meatballs will become dense)
  5. Place meatballs into cast iron skillet
  6. Top with remaining sauce
  7. Bake for ~12 minutes or until meatballs just cooked through
  8. Serve overcauliflower rice with shredded carrots, chopped almonds and cilantro

  1. These look absolutely delicious. I love the flavor combo here – creative and different.

  2. I made these with some premade meatballs from the supermarket. I doubled the sauce because you’ll need to, it’s just not enough in my opinion. I used normal vinegar and instead of the amino I used soy sauce and normal sugar added slowly and the taste checked before adding more. This was sooooo super delicious, I’ll make it again.
