Spaghetti Squash Shrimp Scampi

Everyone’s favorite shrimp scampi with a low-carb, healthier alternative to pasta using spaghetti squash! It’s still amazingly buttery and garlicky with half the calories!

Ingredients

  • 1 Spaghetti Squash
  • 1 lb shrimp
  • 1 Cup Mushrooms
  • 1 Jar Artichokes
  • 1 Bag Spinach
  • 6 Whole Garlic Cloves
  • 1 Can Diced Tomatoes

Instructions

  • Preheat the oven to 450° and place foil on a cookie sheet.
  • Slice the spaghetti squash in half, scoop the inside seeds out and cover with olive oil, salt, pepper and garlic cloves.
  • Bake for 35-40 minutes.
  • In a separate pan, saute the garlic cloves in olive oil then place in the sliced mushrooms.
  • Cook on medium for 5-7 minutes then add in the artichokes, spinach and shrimp. Cook until the shrimp turn pink.
  • Using a fork, scrape the inside of the spaghetti squash.
  • Distribute evenly into four meal prep containers, then top with the shrimp and veggies.
