Pizza Chicken. You’re looking at us funny, we can feel it. Hear us out, because this meal prep recipe just might blow your mind (and your tastebuds!). Let’s be honest, we would all eat pizza every day if we could, right? But all those calories and empty carbs are unfortunately not a great complement to your killer gym workout. But we’re big believers in everything in moderation here at MPOF! So what’s a pie lover to do? Pizza Chicken, of course! This meal prep recipe is all of the things you love about pizza: rich tomato sauce, perfect Italian spices, delicious runny cheese, even mini pepperoni. But instead of carb-heavy crust, we’re putting all of that goodness on top of a perfectly cooked chicken breast!

There used to be nothing better than a tender, juicy chicken breast straight out of the oven. But then we made that tender, juicy chicken breast into Chicken Pizza- and, um, that is definitely better. Because this homemade Pizza Chicken recipe comes together in no time at all (only 26 minutes from start to finish), it’s quick enough for a weeknight family dinner and has definitely become part of the regular rotation in the MPOF houses. Plus it’s kid approved, and gluten-free to boot! Serve yours on top of a fresh mixed green salad or with a side of steamed veggies for a nutritionally complete meal. We love ours with broccoli (shown below)- the crunch of a hearty vegetable is the perfect complement to rich, gooey Pizza Chicken.

½ cup pizza sauce
1 ½ tablespoon pizza seasoning
4 oz mozzarella cheese

Ingredients

  • 1 pound Chicken Breast
  • ½ cup pizza sauce
  • 1 ½ tbsp. pizza seasoning
  • 4 oz mozzarella cheese
  • 2 oz pepperoni
  • 2 cups Broccoli steamed

Instructions

  • Preheat oven to 375 degrees F
  • Place chicken on a baking sheet and top with pizza sauce and pizza seasoning
  • Bake for 8-10 minutes
  • Remove from the oven and top chicken with mozzarella cheese and additional seasoning, if desired
  • Bake for an additional 6 minutes
  • Remove from the oven and add pepperoni, if using
  • Return to the oven until chicken is done cooking
  • Serve with steamed broccoli

  1. Hello, first I'd like to thank you for sharing this super tasty recipe qith us. What I need to know is how long do you keep the chicken in the oven until chicken is done cooking (after adding the pepperoni)? Thanks!

    1. HI Bianca - the time would depend on how large your pieces of chicken are. It is recommended to cook until an internal temperature of 165 degrees F for chicken.

        1. Hi Holly - we just input a generic brand when calculating the macros since all products we
          use are not available world wide. To keep the carbs as low as possible, we would recommend
          a pizza sauce with no more than 8g of carbs per serving.

  2. I used thicker breasts so I adjusted the cook time. I cooked them at 425 naked for 15 minutes, then added the sauce, pepperoni, spices (I also added garlic salt), and cheese. I put them in for another 5 minutes and they came out perfectly. They're moist and flavorful

    1. Hi Sherry- we do not recommend freezing this because the cheese and pepperoni do not taste good when reheated from frozen. However, if you give it a try and find that you enjoy it, please let us know so that we can share with our readers.

    1. Hi Missy - It should be approx 6-8 min depending on the size of the chicken breast. You want to make sure the thickest part of the chicken is 165 degrees to ensure it's fully cooked

    1. Hi Ashley, Unfortunately, we did not calculate the fiber on the recipe. Carbs - fiber = net carbs. However, you can very easily load this into your nutrition tractor to get the count!

  3. Hi I made this and it was yummy! I felt like a lot of my sauce came off when I cooked it, any tips? Also I did use pasta sauce is there a difference between that and pizza sauce?

    1. Hi Julia, the brand of sauce you use will make a difference. You want a thicker sauce. Pizza sauce is normally much thicker than regular pasta sauce, but again it depends on the brand. We are so happy you enjoyed the recipe!

  4. This was awesome. However I think it would be better if I had a meat tenderizer and pounded the chicken flat and thin. Will do that next time. The breasts I got were way too big. Will be making again!

  5. Do you get your mozzarella sliced at the store? Doesn’t look like shredded from the pictures. I assume the cheese will still do fine if using shredded? Excited to make this tomorrow!

    1. Hey Tracy - You could make your own if you have the ingredients on hand, or possibly at your local grocery store. Here is the base for a great pizza seasoning:
      1 1/2 tbsp oregano
      1 tbsp dried basil
      1 tsp dried rosemary
      1 1/2 tbsp dried onion flakes
      1/4 tsp dried thyme
      1/2 tsp coarse sea salt
      1/2 tsp crushed red pepper flakes
      1/4 tsp garlic powder

      1. Woo hoo! It's definitely a seasoning blend that some manufacturers make. We think it's good on a lot of things, including this dish. So glad you found something fun at the grocery store that will help you with your meal prep!

    Hey!

    I was wondering about the chicken. Bought the stuff for this meal prep but I’m confused on the chicken...
    Am I using 4 small breast equaling 1 lbs?
    1lbs of chicken breast is like 700+ calories...

    1. Hey Michelle. Yes... 1/4 lbs of chicken is 1 serving fr this recipe. If you increase your serving size, the macros will adjust from there

If I am preparing this meal for a week of lunches and I want to include the broccoli in the storage (to reduce decision fatigue and try an increase my likelihood of actually eating the broccoli), do I steam it before I store it? Or do I store it as raw broccoli and steam it before I eat it that day?

    1. Mine was steamed prior to storage. Then I just heated in the microwave. It’s soft, but that’s how I like my broccoli.

    As a newly diagnosed diabetic who is struggling to change my habits, eat better, and attempt to combine a diabetic lifestyle with an antiflammatory lifestyle at the same time – I appreciate this recipe.

    I don’t like pepperoni, so it was omitted and made the portions smaller.

    Absolutely delicious. Home made pizza seasoning and sprinkled a little on the broccoli too!
