Meatloaf & Mashed Potato Meal Prep

There is nothing like enjoying a hearty and comforting home cooked meal during the colder months, even when you are at work!

Paleo Meatloaf & Mashed Potato Meal Prep

Lunch doesn’t always need to be a salad! When the colder months arrive we know many of us crave those hearty, warm and comforting meals! Why not enjoy those same traditional dishes in a healthy way even while you are at work!

Serves: 4

Ingredients:

1 recipe meatloaf topped with Pumpkin Mustard instead of ketchup ($8.00)

1lb purple potatoes, diced ($2.00)

1lb broccolini ($3.00)

Method:

  1. Prepare the meatloaf as direct
  2. Boil potatoes and mash with desired seasonings (and ghee)
  3. Roast broccolini with ghee while meatloaf is cooking
  4. Divide between 4 containers
