Chicken Sausage & Parsnip Fries Meal Prep

Switch up your chicken meal prep for a Chicken Sausage & Parsnip Fries lunch instead! Loaded with flavor & nutrients this will become a weekly staple meal!

Lunch doesn't always need to consist of chicken and rice! Switch things up this week by using chicken sausage as your protein, trading in rice for parsnip fries and then rounding the meal out with a pump of color from rainbow cauliflower and romesco!

Serves: 4

Ingredients:

4 chicken sausages ($3.00)

2 extra large parsnips, peeled and cut into desired shape ($1.50)

2 cups cauliflower ($1.00)

2 cups romesco ($1.50)

2 cups spinach ($1.00)

oil & seasoning for roasting

Method:

  1. Preheat oven to 425 degrees F
  2. Line a baking sheet with foil
  3. Toss parsnip fries with oil and seasoning and cauliflower with oil
  4. Spread onto a baking sheet
  5. Add sausages to baking sheet (or can grill if desired)
  6. Roast in oven for ~20 minutes
  7. Evenly divide all ingredients between 4 containers
