Burger and Veggie Meal Prep

Burger Meal Prep

Sometimes you just want a good burger for lunch. Not the fast food kind. The kind that is healthy, packed with protein and served with a big side of veggies like this Burger & Veggie Meal Prep! This whole30 compliant meal prep is all of that plus cheaper than any take out meal!

Ingredients:

1 lb lean ground beef ($4.99)

2 zucchini, sliced ($2.00)

Kabocha squash, cut ($4.00)

Cherry tomatoes, sliced ($2.00)

oil of choice

Method:

  1. Pan fry or grill burgers as desired
  2. Toss veggies with oil.
  3. Lay on a lined baking sheet and roast at 425 degrees for about 15 minutes or until fork tender
  4. Season as desired
  5. Divide between 4 containers
  6. Enjoy hot or cold
