Ingredients:
1 lb lean ground beef ($4.99)
2 zucchini, sliced ($2.00)
Kabocha squash, cut ($4.00)
Cherry tomatoes, sliced ($2.00)
oil of choice
Method:
- Pan fry or grill burgers as desired
- Toss veggies with oil.
- Lay on a lined baking sheet and roast at 425 degrees for about 15 minutes or until fork tender
- Season as desired
- Divide between 4 containers
- Enjoy hot or cold
